Leslie’s Ham & Egg Breakfast Muffins

Ingredients

  • 1 dozen eggs
  • 1/2 cup of milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup of shredded cheddar cheese
  • 1/2 cup of diced ham

Method

  1. Preheat oven to 350 degrees
  2. Spray muffin tin with non-stick cooking spray
  3. In a large mixing bowl whisk together eggs, milk, salt and pepper
  4. Stir in cheese and ham
  5. Pour mixture into 12 muffins cups
  6. Bake for 25 minutes or until muffins are set in the middle
