Jackie’s Corn Casserole Recipe

Mix together in large bowl:
1 stick butter (1/2 cup) melted
1 cup sour cream
1 egg
Stir in:
1 can cream style corn
1 can whole kernel corn (drained)
Add:
1 (9oz) package corn muffin mix

Place in greased 2-quart casserole dish.
Bake at 375 degrees for 1 hour, until crispy on top and center is not jiggly.
*NOTES: I generally make a triple recipe for gatherings & that fills two 9×13 inch
pans. If what you need to make fills your pan deeply, it will take more than an
hour to be cooked in the center.
